Chicken Nachos
Try this quick and easy meal with your family this week...you never know, it may just be added to your 2 week dinner rotation!! :)

Chicken Nachos are a favorite in our home. I don't even think people remember all the time how versatile a good ole' rotisserie is!
I get one every week and use it to make a delicious meal for my family. If you have a Sam's near you, you really can't beat a 5 dollar large chicken. I don't have a Sam's so I get mine at Kroger (7.99 is still good though).
First: Get a hot rotisserie chicken and shred it finely. After I shred, I add some Lowry's or Creole to spice it up a bit (feel free to skip but it does add some extra delicious flavor).
Next: spread your favorite tortilla chips over a large baking sheet. I would start with a thin layer because we are going to stack more on top! ;)
What are your families favorite toppings?
In my home, we only add cheese and black beans to the stack. We like to add the rest of the toppings once it's baked!
So, go ahead and begin your layering. I do 2 layers of these 4 ingredients.
- Chips,
- Chicken
- Black beans (washed and drained)
- Cheese
Bake at 350 for about 10-12 minutes! Get that cheese nice and melty.
Some cold toppings to add after:
- sour cream
- salsa
- taco sauce
- guacamole or just solid avocados
- lettuce
- Queso
- Cilantro (if you can get this fresh, wow what a difference)
Once the nachos come out of the oven, put a big stack on your plate and add your toppings! So yummy!! Such a quick weeknight meal. Start to finish it takes about 10-15 minutes!
Ways to get your kids involved...
- get out all the cold ingredients from the fridge
- set the table
- fill the water cups
Whatever it may be, they just want to help! :)
